JAMIM’ BERRY JAM – (Sugar Free)
6 oz organic raspberries (any berry will do here)
1/4 cup water
1/4 teaspoon arrowroot powder
1 teaspoon gelatin (I use Great Lakes beef gelatin for collagen and joint care)
2-4 drops liquid stevia (optional)
Simmer berries and water on stove for approximately 10 minutes. Using a fork or whisk, break up the berries. Add arrowroot, gelatin and a few drops of liquid stevia (optional). Stir and remove from heat. Jam will thicken upon standing. Top with coconut flour biscuits!
COCONUT BISCUITS (Sugar Free, Grain Free)
½ Cup coconut flour
5 Tablespoons grass fed butter, softened
1-2 Tablespoons Sweet E (erythritol/stevia blend)
½ teaspoon sea salt
½ teaspoon baking powder
Preheat oven to 400 degrees F. Put all ingredients in a mixer, and mix well. Using a tablespoon, spoon out onto a lined baking sheet, and flatten with the back of the spoon. Bake for 12-15 minutes until slightly brown on top. Remove from baking sheet, and allow to cool. Enjoy!
