Happy St. Patrick’s Day!
This is my holiday – I am part Irish (my given name is Patricia Donovan), married an Irishman, chose green Le Creuset pots and pans, painted my kitchen cabinets a blue-green without meaning to – I just love everything GREEN! To celebrate St. Patty’s day, I have two recipes for you to pick from today!
These recipes sneak in anti-oxidants, as who can’t benefit from some help from over coming free radicals and even fighting off cancer in our bodies! Blueberries are one of the most amazing antioxidant rich foods in the world! They are high in vitamin K, Vitamin C, resveratrol (proven to reduce skin damage from too much sun, as well as anti-aging properties), gallic acid (anti-fungal/anti-viral), and much more. Blueberries are also great for lowering blood pressure as well as helping you lose weight!
Experts say most of us do not eat enough magnesium, which is essential for every cell in your body as it helps create ATP, or cell energy. Want some of that raw energy you see young kids have? Consume foods high in magnesium! Raw pumpkin seeds are rich in magnesium and also great for your heart, bones, and also a rich source of zinc. Zinc helps regulate your mood, sleep, blood sugar and even shown to help with depression and increase school performance!
I added chlorophyll for the lovely green color today, however you may also know there are amazing health and healing properties in chlorophyll too. A recent study showed this green powerhouse can control your hunger and cravings, helping you to loose weight. Also rich in antioxidants, chlorophyll also binds with heavy metals and carcinogens. I knew I loved green for a reason!
Chocolate Amaz-mint Smoothie
(Makes 2-3 servings)
1 cup full fat plain yogurt
1 cup milk of choice, I used coconut milk
1 cup blueberries, frozen
1/4 cup raspberries, frozen
1/4 cup pumpkin seeds
4 tsp raw Cocoa (or cocoa nibs, or other chocolate)(optional – omit for green coconut smoothie)
2 Tablespoons coconut oil
8 drops chlorophyll concentrate (for color and building red blood cells)
1/4 tsp peppermint extract
1 tsp vanilla extract
1 tablespoon raw honey (or 1/4 tsp stevia or other natural sweetener, optional)
1 cup ice
Fresh mint (use a few leaves in smoothie, and for decoration)
Put all ingredients in a blender, blend in high until desired consistency. Enjoy!
