CASHEW POWER BALLS
Nuts are a great powerhouse when it comes to fiber, unsaturated fats, and protein. Nuts also suppress your hunger due to the fat content, making them great pre-workout and as a healthy snack. In a recent article by the American Journal of Clinical Nutrition, they support nuts in a healthy diet for cardiovascular health. Well, we have been preaching that for years, lol. Coconut is also amazing for so many reasons, coconut contains protein, more fiber and is a quick source of great fuel for your body. Coconut fats are easily and quickly digested, again a great pre-workout option.
8 pitted dates
1/2 cup shredded coconut unsweetened
1 cup cashews (or pecans, or almonds…)
Optional- cocoa nibs
Option pinch of sea salt
Place in food processor for about 30 seconds. Form into balls and refrigerate. I use a small ice cream scooper to form the balls. Make sure they are really compact and form into balls, or shape of choice. Refrigerate for at least an hour. Enjoy!
Lots of variety available in this recipe. Try to add minced dry fruit like mango or apricots. Or raw cocoa nibs. Whatever you choose… Enjoy!
