This is a great recipe for a quick sweet fix and an energy boost too from the protein in the nut butter. This basic recipe that has lots of possible variations. Add chocolate chips (like Lilly’s stevia sweetened chips) as I did in the picture above. Share with me your creations, I’d love to hear from you!
I cup old fashioned oatmeal (Bob’s Red Mill)
1/2 cup raw almond butter
1/3 cup honey (or 1 teaspoon liquid stevia glycerine)
1 cup coconut flakes, unsweetened
1/2 scoop vanilla egg protein (Jay Robb)
Put all ingredients into mixing bowl, mix on medium until all incorporated. Scoop onto payment lined cookie sheet. You may want to roll into balls in your hand to keep balls together. Freeze for one hour, then refrigerate until gone. Last for about one week (if you’re lucky!)
I leave them in the freezer and just take out a few as needed for the week. If they last that long!
