Sprouted Cinnamon Raisin Baked French Toast (Serves 8-12)
1 loaf sprouted cinnamon raisin bread, Ezekiel brand, cubed
1/2 cup coconut milk
1/2 cup half n half (feel free to substitute – use all coconut milk, or whole milk or almond milk, or other “milk” of choice)
1 tablespoon ground cinnamon
1 teaspoon nutmeg
1 1/2 teaspoon vanilla
1/2 teaspoon sea salt
8 oz organic cream cheese
1 Tablespoon honey or pure maple syrup. (optional)
Coconut oil (for pan only)
All items recommended as raw, organic and farm raised, if possible
Preheat oven to 375.
In 9×11 pan, rub sides and bottom with coconut oil, or line with parchment. Fill bottom of container with cubed bread.
In a medium bowl, add eggs and all other ingredients up to cream cheese. Whisk together well. Pour over bread. Using a fork or the back of a spoon, push all the bread down into the egg mixture to make sure all of it gets wet. Top off with slices of cream cheese. Drizzle honey over top (optional) and place in oven. Cook for approximately 30 minutes.
